This was one of Jon's favorite meals we tried. We've made it twice and each time was equally good. It tastes really good the next day heated up and made extra. So it was perfect for his work lunch. We switched the white rice for brown and added more veggies than they called for. They suggest onions, peas, and carrots; but we also added celery, corn, and whatever veggies we had on hand. And the sweet and sour chicken turned out really great as well! This recipe is definitely going in our recipe box!

Jon was on Days one week so that means he has to get up super early. We made this recipe the night before and it was ready for him when he woke up the next day. We halved it and it still made a lot! But turned out pretty good.

This Cobb salad turned out pretty good. I think next time we'll try a different dressing. We weren't huge fans of the red wine lemon vinaigrette. It was good, but that night I think we wanted something different.

We also made this version of a Caeser Salad. The dressing isn't the one I normally make for a caeser but it tasted pretty good on it.

I have been obsessed with Pinterest-ing recipes. I type in the ingredient I'm craving, and voilĂ ! Dozens of suggestions. I weed through them to find something mildly healthy (or at least easy to lighten up!), and usually find some great ideas. I'm trying to get back on track with regular blogging, which means recipes on Sundays, and this Sunday, I'll be doing something from Pinterest!
